Shakshouka

ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon sliced onion
  • Sliced red pepper
  • 3 cloves garlic, minced
  • 2 tablespoons crushed tomatoes
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon coriander
  • 1 teaspoon crushed red pepper flakes
  • Salt, to taste
  • A pinch of ground black pepper
  • 8 large eggs
  • 1/2 cup crumbled feta cheese
  • Fresh chopped parsley
  • Bread for serving
Shakshouka

Steps

  1. Preheat the oven to 375 degrees and heat the oil in a large skillet over medium heat.
  2. Add the onion and cook until golden brown for about 20 minutes.
  3. Add the red pepper and cook until tender, about 5 minutes.
  4. Add the garlic and cook until tender, about one minute.
  5. Add the tomatoes and harissa (if using), spices, and season with salt and pepper. Let it simmer to thicken, for about 10 minutes.
  6. Transfer the sauce to a baking dish and make 8 wells in the sauce, then crack an egg into each well. Season the eggs with salt and pepper.
  7. Cover the baking dish with aluminum foil and bake in the oven until the egg whites are just set, for 12 to 15 minutes.
  8. Garnish with crumbled feta cheese and parsley.
  9. Serve the dish with bread.
