Shakshouka
ingredients
- 2 tablespoons olive oil
- 1 tablespoon sliced onion
- Sliced red pepper
- 3 cloves garlic, minced
- 2 tablespoons crushed tomatoes
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon coriander
- 1 teaspoon crushed red pepper flakes
- Salt, to taste
- A pinch of ground black pepper
- 8 large eggs
- 1/2 cup crumbled feta cheese
- Fresh chopped parsley
- Bread for serving
Steps
- Preheat the oven to 375 degrees and heat the oil in a large skillet over medium heat.
- Add the onion and cook until golden brown for about 20 minutes.
- Add the red pepper and cook until tender, about 5 minutes.
- Add the garlic and cook until tender, about one minute.
- Add the tomatoes and harissa (if using), spices, and season with salt and pepper. Let it simmer
to thicken, for about 10 minutes.
- Transfer the sauce to a baking dish and make 8 wells in the sauce, then crack an egg into each
well. Season the eggs with salt and pepper.
- Cover the baking dish with aluminum foil and bake in the oven until the egg whites are just set,
for 12 to 15 minutes.
- Garnish with crumbled feta cheese and parsley.
- Serve the dish with bread.
